Spooky Spaghetti and Meatballs TM5

Ingredients x 6

Meatballs

olive oil to grease
1000 g water
80 g red quinoa
60 g onions quartered
2 garlic cloves
30 g fresh herbs (mixed, e.g. parsley, thyme, oregano)
1 tsp fine sea salt to taste
1 tsp ground black pepper
½ tsp dried chilli flakes optional
¼ tsp dried fennel seeds
550 g turkey meat, boneless and skinless cut in pieces (3 cm)
1 large egg
25 - 35 pitted black olives halved

Tomato Sauce

110 g onions quartered
2 garlic cloves
30 g olive oil
800 g tinned chopped tomatoes (2 x 400 g tins)
½ tsp fine sea salt to taste
½ tsp ground black pepper

Spooky Spaghetti

1150 g water
1 ½ tsp fine sea salt
340 g dried spaghetti


Preparation

Meatballs

Lightly grease Varoma dish and Varoma tray then set aside.
Place water in mixing bowl, insert simmering basket, weigh in quinoa and rinse 10 sec/speed 5. Mix well with spatula and cook 20 min/Varoma/speed 2. Transfer to a bowl and allow to cool slightly. Clean mixing bowl.
Place onions, garlic, herbs, salt, pepper, chili flakes and fennel seeds in mixing bowl then chop 5 sec/speed 5.
Add turkey and chop Turbo/2 sec/4-5 times until turkey is ground up.
Add egg and reserved cooked quinoa then mix 10 sec/speed 5.
Shape mixture into balls (approx. 30 g each) and place in prepared Varoma dish and tray. Gently press 1 black olive half on top of each ball to form the eye, then set Varoma aside.

Tomato Sauce

Place onions, garlic and olive oil in mixing bowl then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula and sauté 3 min/120°C/speed 1.
Add tomatoes, salt and pepper, place Varoma into position, cover with Varoma lid and cook 15-18 min/Varoma/speed 1. Transfer sauce and eyeballs to a serving plate and keep warm.

Spooky Spaghetti

Place water and salt in mixing bowl then bring to a boil 10 min/100°C/speed 1.
Add pasta through hole in mixing bowl lid and cook without measuring cup for time indicated on packet/100°C/antiorario/speed 1 or until al dente. Drain pasta through Varoma dish.
Divide pasta, tomato sauce and eyeballs between 6-8 bowls and serve immediately.


Tips

Serve with grated Parmesan cheese or additional black olives.
To save time, cook pasta on the hob while the sauce and meatballs are cooking.
Using dark turkey meat will ensure that the meatballs remain juicy.
Keep a bowl of water nearby to moisten hands and prevent sticking while making meatballs.

Variations

Replace regular spaghetti with squid ink spaghetti for an extra spooky finish.
